Vegan Manicotti Filling (Ricotta "Cheese")


  • 16 ounces firm tofu (not silken)
  • 2 tablespoons olive oil
  • 3 heaping tablespoons sesame tahini
  • 1 tablespoon nutritional yeast (co-ops and upscale groceries have it)
  • 1 teaspoon sage
  • 1/2 teaspoon salt
  • Black pepper to taste

    Mix in food processor until smooth. If it does not smooth out easily, add a very small amount of water and scrape down the sides.

    This goes very well in baked manicotti or lasagna.
