Vegan "Tunafish" Sandwich


I stumbled upon this version today after numerous experiments. It's simple, easy to make, and delicious.

Ingredients

  • 4 oz extra firm tofu
  • 4 tablespoons Nasoya "Nayonnaise" or similar product (vegetarians may wish to substitute real mayo)
  • 1/2 pound seitan (I use White Wave Chicken Style)
  • 1 tablespoon tahini
  • 6 slices of bread
  • Pinch of salt

Method:

Blend the tofu, Nayonnaise, and tahini in a food processor. Add the seitan. For best texture, run the food processor just long enough to chop it into little pieces.

Skip the salt if you wish, but be aware that tunafish is salty stuff. If you are trying to please a tunafish eater, keep the salt.

Notes:

Makes at least three generous sandwiches. I grilled my bread in a drop of olive oil, with a clove of garlic and a bit of salt and pepper, resulting in a very convincing "restaurant-style" sandwich.
